Tasting olive oil requires finesse and shamelessness. Here’s how to taste it properly:
* Pour a pinky finger’s worth of oil into a blue, vase-like glass that hides the color and centers the smell
* Swirl the glass around in your palm to warm and oxidize the oil
* Bring the glass close to your face and inhale deeply through your nose
* Take a big sip, slurping in, and swish around vigorously
* Swallow, and notice the bitterness, fruitiness and finally, the peppery kick that ends the tasting
